S&S Acres stands for Stitches and Staples — surgery on one side, ranching on the other. Weekdays, Dr. Jason Bowersock is a board-certified general surgeon in Lima, Ohio. Evenings and weekends, it’s fencelines, feed runs, and herd checks — the fifth generation of his family farming Ohio ground. From the OR to the pasture, the standard doesn’t change.

The jerky is the newest program. The herd behind it is the bigger story — and it runs under four named specialists.

The rare blonde-cream-white bull, ~4 years old.

Snowflake anchors our rare-phenotype breeding program within Tonka MD's bison domain. Honest framing — no purity claims. He runs in a brucellosis-negative, tuberculosis-negative herd alongside two mature white cows and four white heifers born in 2025 — daughters of Thor, our previous white bull. Inferno MD · The Crown

Antlered.

Elk and red stag. The growth lane.

BoneHead and Kodiak — our two new lead bulls, both four years old: BoneHead an international champion carrying 478 inches in 2026 with a strongly CWD-resistant genomic profile, Kodiak a 480-inch-class bull on his own cow group. Hurricane, our seven-year-old LL bull, sold in October 2026 after leading the herd since Inferno. CWD-clean herd since inception, most recently tested February 2026.

Inferno — the namesake of Inferno MD: our original main breeding bull, the largest elk we've raised, and the foundation sire who started everything. He sold in 2025, but his LM-genotype semen lives on via State Line Cryogenics, the genetic complement we cross with our LL line to build the next generation.

Gizmo — the named red stag and the foundation of our growing red deer program within the antlered lane.

Rawhide — a three-year-old Inferno son coming up through the program, 358 inches in 2026 — the line carrying forward in real time.

The antlered program is the heart of the long-term breeding business at S&S Acres — built for serious buyers, hunting preserves, and ranches building their own trophy programs. 2025 antler measurements: Hurricane 464", Inferno 589". 2026: BoneHead 478", Rawhide 358" (age 3).

We raise bison on our own pasture in Lima, Ohio. Bison from our herd are processed at 3D Meats in Dalton, Ohio, and all Tonka Bison jerky is made by our USDA-inspected co-pack partner.

Tonka Bison is made with bison from our ranch and trusted U.S. partner ranches. Our herd: pasture-raised, never feedlot-finished, with a supplemental ration. It's American bison, US-raised, USDA-inspected.

Bison is the first jerky line. Elk is next. One program at a time, each held to the same standard.

Dr. Jason Bowersock is a board-certified general surgeon in Lima, Ohio — and a fifth-generation farm kid who never left the land. The name says it: S&S Acres — Stitches and Staples. Surgery on one side, ranching on the other.

S&S Acres started in 2010. The family bought this farm in 2016, and the first bison arrived in 2018. Since then the ranch has grown to carry a four-mascot exotic livestock portfolio — bison, elk and red deer, Highland and Watusi cattle, and yak — alongside the Tonka Bison Jerky line.

Five Generations
of Ohio Farming.

S&S Acres is its own ranch within a farming family. Stephanie (wife). Cooper (youngest son), Delanie (daughter), Kalob (oldest son). Jason's dad farms the traditional family piece — crops, cattle, pigs — with his brother running the day-to-day there. Jason's mom is in everything they built; she passed in 2025, and the place still carries her. Five generations of Ohio farming behind it all.
